Brussel Sprout w/ Bacon and Gala Apple

Cook time 30-45 minutes

What you will need:

1 lb Organic Brussel Sprouts stem cut off
1 medium sized organic onion chopped
4 cloves organic garlic minced or use a garlic press
6-8 slices of organic bacon or local cut chopped
2 small sized or 1 large organic Gala Apple sliced kind of thin
Rosemary
Throw it together:

Grab a large sized pot and fill with water and a dash of salt. Bring to a boil. When it starts to boil throw in your brussel sprouts and set the timer for about 7-9 minutes.

Meanwhile in a large skillet throw in your chopped bacon on and on medium cook till its half way done, drain the fat off. Then take some evoo ( extra virgin olive oil ) and splash some in your large skillet. Throw in your garlic and onion and turn down to low. Toss in about 2 tbsp of Rosemary crushed up. Let all this simmer and cook for the time it takes for your water to boil and the brussel sprouts to be done cooking. 

When the timer goes of for the brussel sprouts you can take a fork and see if they are mostly cooked by sticking it in and if it goes in easily awesome. at this point turn the onion mix on to medium. Strain your brussel sprouts and then dump them in the skillet. I just grab my fork and knife and start cutting the brussel sprouts in half and the big ones in quarters. I would add salt and pepper at this point especially if you have bacon that is not overly salty. Sea Salt works best to take out the bitter flavor of the brussel. Lid the skillet and let it cook down for a while, maybe about 10-15 minutes

Take your apples and throw those in the skillet and stir up, lid again and cook for an additional 3-4 minutes. you just want the flavor of the apples to get out. I take it off the stove and set it on the table, lid off and let it cool for a few minutes then stir and serve!
